The Cucumber Chill is a signature cocktail from the Jean-Michel Cousteau Resort in Fiji, one of the world's first eco-luxury hotels. Described as "like a classic Pimm's without the frills," this refreshing drink showcases the clean, crisp flavors of cucumber and lime paired with botanical gin. The addition of sugarcane juice adds a subtle sweetness that's perfect for sipping on a hot day by the beach.
Ingredients
- 1.5 oz Hendrick's gin
- 2 oz Cucumber juice
- 0.5 oz Lime juice
- 0.5 oz Sugarcane juice
Directions
- Combine gin with lime, cucumber, and sugarcane juices in a cocktail shaker.
- Add ice and shake until well-chilled.
- Strain into a glass filled with fresh ice.
- Garnish with a cucumber slice or spear (optional).
Notes/Tips
The resort uses local Fiji limes and organic mint and cucumber for an authentic tropical flavor. If sugarcane juice is unavailable, you can substitute with simple syrup made from raw sugar.
