Rich Demerara Syrup is a premium sweetener used in craft cocktails to add depth, complexity, and a subtle molasses-like flavor. Unlike regular simple syrup made with white sugar, demerara syrup uses unrefined demerara sugar, which retains more of its natural molasses content. The "rich" in the name refers to the 2:1 sugar-to-water ratio, creating a thicker, more concentrated syrup that adds sweetness without diluting your cocktails as much. This syrup is particularly excellent in aged spirit cocktails like Old Fashioneds, Manhattans, and rum drinks, where its caramel notes complement the wood-aged flavors.
Ingredients
- 2 parts Demerara sugar
- 1 part Water
Directions
- In a small saucepan, combine 2 parts demerara sugar and 1 part water.
- Place over medium heat and stir until the sugar is completely dissolved.
- Do not allow the mixture to boil, as this can cause crystallization.
- Once all sugar is dissolved, remove from heat and let cool to room temperature.
- Transfer to a clean, airtight container.
- Store in the refrigerator for up to one month.
Notes/Tips
Demerara sugar is a type of minimally refined raw cane sugar with large, crunchy crystals and a natural toffee-like flavor. If you can't find demerara sugar, turbinado sugar (often sold as "Sugar in the Raw") makes a good substitute.
The 2:1 ratio creates a "rich" syrup that has a longer shelf life than standard 1:1 simple syrup and adds less water to your cocktails. This is particularly useful in spirit-forward drinks where you want to maintain the drink's potency while adding sweetness.
For an extra dimension of flavor, you can add a cinnamon stick, star anise, or a split vanilla bean to the syrup as it cools. Remove the spice before bottling.
