Ingredients
- 1 cup (8 oz) Cream of coconut
- 3/4 cup (6 oz) Pineapple juice
- 2 tablespoons Fresh lime juice (about 1 lime)
- 1 teaspoon Rum extract
- 10 oz Frozen pineapple chunks (about 3 cups)
- Garnish: Maraschino cherries (optional)
- Garnish: Fresh chopped pineapple (optional)
- Garnish: Pineapple leaves (optional)
Directions
- Add cream of coconut, pineapple juice, lime juice, rum extract, and frozen pineapple chunks to a blender.
- Blend until all ingredients are combined but still slightly chunky.
- Transfer the mixture to a container and freeze for about 45 minutes to thicken.
- Return the partially frozen mixture to the blender and blend again until smooth and creamy.
- Pour into hurricane glasses or tall glasses.
- Garnish generously with maraschino cherries, fresh pineapple chunks, and pineapple leaves if desired.
- Serve immediately with a straw.
Notes/Tips
Cream of coconut is different from coconut cream or coconut milk. It's sweetened and has a thicker consistency, typically found in the mixer section of grocery stores. Popular brands include Coco Lopez and Coco Real.
For a thicker drink, you can add more frozen pineapple or a cup of ice. For a thinner consistency, add more pineapple juice.
The rum extract adds the characteristic flavor of a traditional Piña Colada without the alcohol. If you don't have rum extract, you can substitute with a small amount of vanilla extract and a pinch of almond extract.
