Ingredients
- 2 oz London dry gin
- 1 oz Fresh lemon juice
- 0.5 oz Simple syrup
- 0.5 oz Egg white or aquafaba (optional)
- Garnish: Lemon twist (optional)
- Garnish: 3 drops Angostura bitters (optional)
Directions
- Add the gin, lemon juice, simple syrup, and egg white (if using) into a cocktail shaker without ice.
- Vigorously dry-shake for about 15 seconds to emulsify the egg white.
- Add ice and shake again until well-chilled, about 15 seconds.
- Strain into a coupe glass.
- Decorate the frothy top with 3 to 5 drops of Angostura bitters if desired.
- Garnish with a lemon twist if desired.
Simple Syrup
- Combine equal parts sugar and water in a small saucepan.
- Heat over medium heat, stirring until sugar is completely dissolved.
- Allow to cool before using.
- Store in a sealed container in the refrigerator for up to one month.

When working with raw egg white, always use the freshest eggs possible and be aware of the potential risks associated with consuming raw eggs.
For a vegan alternative, aquafaba (the liquid from canned chickpeas) works well as an egg white substitute, creating a similar foam and texture.
