Sheena’s Gin Sour is a personal take on the classic gin sour, featuring a carefully selected gin with citrus or coastal notes, fresh lemon juice, and a silky egg white foam.

Ingredients

  • 4 oz Gin (preferably with citrus or coastal notes, like Hendricks Neptunia)
  • 2 oz Fresh lemon juice
  • 1 oz Simple syrup
  • 1 oz Egg white
  • Angostura bitters (for garnish)
  • Lemon twist (for garnish)

Directions

  1. Chill coupe glasses by filling them with ice and water.
  2. Grab a shaker tin, but DO NOT ADD ICE.
  3. Add gin, lemon juice, simple syrup, and egg white to the shaker tin.
  4. Cover the shaker tin and shake vigorously WITHOUT ice for at least 30 seconds to create a good foam.
  5. Open shaker and add ice cubes, then shake again for 10 seconds to chill the cocktail.
  6. Dump ice and water from the coupe glasses.
  7. Strain into the coupe glasses.
  8. Add 5 small drops of bitters on top of the foam using an eye dropper.
  9. Take a toothpick and run it through the bitter drops to create a circle of hearts around the glass.
  10. Garnish with a lemon twist.

Simple Syrup

  1. Add 1 cup water to a small pot.
  2. Add 1 cup sugar to pot.
  3. Bring sugar water to heat over medium to high heat.
  4. Turn it off before it boils.
  5. Let cool before using.

Notes/Tips

Equipment Recommendations

  • Strainer
  • Eye dropper (or toothpick)
  • Coupe glasses
  • Channel knife (for the lemon twist)

Reverse Dry Shake Technique

  • Put ingredients into a shaker WITHOUT ice.
  • Shake vigorously (30 to 60 seconds) to create a meringue or thick foam.
  • Add ice to the tin.
  • Shake again for at least 10 seconds to chill the cocktail.
  • Strain into glass.

Your drink can only be as good as the quality of your ingredients, so don't skimp out. While Hendricks Neptunia is recommended, it may be discontinued. Look for gins that have a citrus or coastal vibe as alternatives.

Separating the yolk from the egg per order will create the best cocktail, but you could use store-bought egg whites in a pinch.
