Notes/Tips
The egg white creates the signature frothy foam on top of this cocktail. The dry shake (without ice) followed by a shake with ice is key to achieving the perfect texture. If you have concerns about raw egg, you could substitute with aquafaba (chickpea liquid) as an alternative.
Cane syrup provides a richer sweetness than regular simple syrup, complementing the tequila and lime perfectly. Joey Kitchen at University Village is known for their consistent cocktails and vibrant atmosphere. This margarita is one of their signature drinks that pairs well with their diverse menu.
