Ingredients

  • 2 oz Tequila
  • 2 oz Fresh lime juice
  • 6 oz Lychee syrup
  • Garnish: Lime wedges or whole lychee
  • Garnish: Pink salt or sugar for rim

Directions

  1. If desired, rim your glass with pink salt or sugar by running a lime wedge around the edge and dipping in the pink mixture.
  2. Fill a cocktail shaker with ice.
  3. Add tequila, fresh lime juice, and lychee syrup to the shaker.
  4. Shake vigorously until well-chilled, about 15 seconds.
  5. Strain into the prepared glass filled with fresh ice.
  6. Garnish with lime wedges or a whole lychee on a pick.

Lychee Syrup

  1. Empty the contents of a can of lychees (fruit and syrup) into a blender.
  2. Blend until completely liquefied.
  3. Strain the mixture through a fine-mesh sieve to remove any solids.
  4. Store in a sealed container in the refrigerator for up to one week.

Notes/Tips

You can adjust the sweetness of this cocktail by varying the amount of lychee syrup. The recipe as written creates a sweeter cocktail that showcases the lychee flavor.

For a more traditional margarita balance, you might reduce the lychee syrup to 1-2 oz and add 0.5-1 oz of triple sec or Cointreau.

If canned lychees aren't available, you can use fresh lychees blended with simple syrup, or substitute with bottled lychee juice mixed with a bit of simple syrup.
